Fresh produce is picked to order. Our regular hours are Tuesdays from 5 - 7 pm. and Saturdays between 9 - 11 a.m. Please call in or email your order by 8:00 a.m. on Friday for Saturday morning pick up or by 8:00 a.m. on Tuesday for Tuesday evening pick up.

Italian Tomato Sauce "Strategy"
relayed to us by CSA shareholder Pam Cress

"Put some olive oil and lots of tomatoes cut in “chunks” in a big sauce pan. Add lots of chopped basil, several cloves of garlic, minced, and salt and pepper to taste. Simmer until it is the thickness you want. If it’s more convenient, get the tomatoes cooked and add the basil later. This “strategy” is very forgiving! When it is the consistency you want, you can either put it on pasta, chicken, both, or freeze it in typical serving sized containers. What we love best is that when you thaw it in the winter it tastes like a big burst of SUMMER! We also like it fresh, as we did last night.

FYI – this started as a recipe a young woman we know (vegetarian) gave us after a year in Italy. She was introduced to it as a soup, with extra water or vegetable broth. Her host parents put day-old bread cubes into the soup. We tried that and didn’t really like it that way, but one of us said “this would make a great pasta sauce”. Boy were we right!"

We are partnering with a producer in northeast Oklahoma to provide our customers with Black Angus beef. This beef is grass raised then grain finished the last four months at a small, family owned and operated, feedlot. No antibiotics or growth hormones are used. They are wormed with a commercial wormer twice to minimize internal parasites and are vaccinated for black leg. All calves are born and grass raised on the ranch. This is delicious meat!

Pick up will be in late April or early May 2011.
